Quick Snacks: Spicy Noodle Soup With Egg

It’s 3:00 and my stomach is pitching a fit. I’m hungry. So what will it be: a chocolate bar, salt and vinegar crisps … an apple? Borr’rring. I know! Some very spicy noodle soup with a poached egg floating on top.


It’s dead-easy, ready in under 5-minutes, and only an apple is better for you.

Spicy Noodle Soup with a Poached Egg

500ml very hot chicken and beef stock (50/50)
1 portion of thin soup noodles (enough to make you happy)
1 spring onion thinly sliced at diagonal
1 poached egg (here’s the recipe/method)
Hot Hot Hot Hot Sauce

Set a pot of water on the cooker to boil. Poach the egg. 3 minutes. Or so. Easy. Remove egg and set on kitchen towel to drain. Done. Water still boiling? Cool. Add enough salt so the noodles think they’re swimming in the ocean. When the water boils, pitch the noodles over your right shoulder into the pot. Cook. 4 minutes. Or so. Whatever. Pour hot stock into your soup bowl. Add enough hot sauce to wake the dead. Drain noodles. Slop them into your soup bowl. Top with the poached egg and spring onions. Done. Finished. Eat. Yum.
